POSITION: Head Chef – Pretoria, Hatfield
OVERVIEW OF POSITION:
We are looking for a Head Chef to run a vibrant busy kitchen. This kitchen includes a daily al-la-carte service, catering service for 10 – 800 pax per occasion. The catering service includes canapés for cocktail functions, harvest table for big groups and sit down dinners for vip’s.
The kitchen plays a key role in the Guest Experience and the Chef’s role requires a unique person to ensure the success of the culinary operation and provide the guests with that special and memorable dining experience.
REQUIREMENTS / QUALIFICATIONS / SKILLS REQUIRED:
Grade 12/ Matric
Formal Chef Qualification
Previous experience in a 4 / 5* hospitality environment
A passion for food – (good fine dining skills / plating technique)
Own vehicle and valid driver’s licence
Menu planning, catering and function planning, stock ordering, food costing and calculation, shift schedule planning, daily stock take and control.
All other duties or tasks that might be required from managing a very busy kitchen this includes good people and HR skills and knowledge.
Supervising and training of kitchen staff.
Preparation of food in line with Standard of Excellence.
Effective guest interaction with regards to specific dietary requirements to enhance guest satisfactions.
Administration of orders to minimize shortages, wastage and effectively control kitchen stock.
Correct use, care and maintenance of kitchen equipment at all times.
Communication with kitchen, restaurant and front of house staff to ensure the smooth running of the department.
SKILLS / BEHAVIORS:
Ability to lead a kitchen.
Excellent understanding of kitchen procedure and timing requirements, good planning and organizational skills.
A passion for food and kitchen-related duties and be determined to grow in this area.
Good communication skills and people interaction.
Good cooking skills, able to present healthy, innovative and modern dishes.
Able to work under pressure.
Understanding of health and hygiene issues safety procedures and the use of fire fighting equipment and first aid training.
Plan menus for guest and their needs.
Prepare, handle, and store food using internationally acceptable hygiene standards.
Clean and maintain kitchen and food preparation areas using internationally acceptable hygiene standards and according to the requirements of the hygiene audit.
Negotiable depending on experience. Plus incentive structure.
Monday – Friday
Hours: 6:30 till 16:00
Occasional evening and weekend functions.
